I’ll tell you something, I test myself now after nearly everything I try for the first time and to be honest with you, I haven’t had a spike after eating anything that has stevia in it. I don’t typically overdo the stevia, however, I do use a tiny bit of it if I’m needing a bit of sweetness in like coffee, a mug of cake etc. So just be mindful when using it.

If you have a sweet tooth but don’t want to indulge in the side effects of sugar, Stevia is for you. It’s a plant-based, natural sweetener around 200-300 times sweeter than sugar. But the good thing is it’s zero calories and doesn’t pump your blood sugar.
Now, if I tell you a little about its science, it comes from Stevia rebaudiana plant leaves. You might not believe it, but ancient people used the Stevia plant as a sweetener for centuries. You can get Stevia in all forms, be it liquids, extracts or powder.
Fun Fact: Do you know that Stevia is calorie-less, but it is indirectly involved in increasing Obesity? Yes, Stevia stimulates the reward pathway in the brain through sweet taste receptors. In turn, these receptors increase your appetite. So when you eat more, you get fat.
Don’t worry; this fact was meant to give you information. Generally, Stevia has no side effects on health. It is completely safe and approved to use.
Baking Tips for Low-Carb Stevia Brownies
While the detailed recipe for Stevia brownies is mentioned here, I will tell you some secret tips to make perfect brownies.
- Always use eggs, coconut oil, and butter at room temperature. Don’t use refrigerated ones!
- Do not use baking mix for the Low-carb stevia brownies.
- If you want your brownies to be fudgy, increase the butter/coconut oil to almond flour ratio, and for cakey brownies, do the opposite.
- Don’t overbeat the eggs for fudgy brownies. Why? Because bubbles in the egg will make them cakey.
- Don’t put all the eggs at once. Instead, add the next when you are not beating the former.
Serving Suggestions for Delicious Stevia Brownies
You can be creative with serving ideas of stevia brownies. You can use whipped cream (unsweetened) or sprinkle some berries or resins.

Ingredients for Stevia Brownies
Yields: 12 brownies
- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup Stevia (or adjust to taste)
- 2 eggs
- 1/2 cup coconut butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions for Making 3 Ingredient Stevia Brownies
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- Mix Dry Ingredients: In a mixing bowl, whisk almond flour, cocoa powder, Stevia, and salt until well combined. Ensure there are no lumps.
- Combine Wet Ingredients: In a separate bowl, beat the eggs and vanilla extract together until frothy. Add in the melted coconut butter and mix until smooth.
- Combine Wet and Dry: Pour the wet ingredients into the bowl of dry ingredients. Stir until everything is well combined and forms a thick batter. Make sure there are no dry spots.
- Transfer to Pan: Pour the brownie batter into the prepared baking pan, spreading it out evenly with a spatula.
- Bake: Place the pan in the preheated oven and bake for about 20-25 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake, as brownies can dry out quickly.

How to Make Low-Carb Brownies for Insulin Resistance
Whenever you make brownies for insulin resistance, refrain from two things: sugar and carbohydrates.
As for my brownie recipe, I use Almond flour. So, it would be best if you also refrained from wheat flour. Instead of using almond flour, you can also use a coconut flour, however it is not a one to one substitute.
Is brown sugar good for brownies?
Yes, brown sugar is good for brownies unless you don’t worry about blood sugar levels. Brown sugar will give your brownie a chewy and rich flavor, but its crust will be solid.
This stevia brownies recipe is super easy to make. There is no rocket science behind it, and you can enjoy the low carb brownie at home.
But know that Stevia is around 300 times sweeter, so use it carefully when adding it. Moreover, ingredients should be used at room temperature for the best results.
